Truth be told, I’m not a huge fan of summer. I just don’t like being hot! Snow cones and swimming pools help but not enough. Fall is more my jam and I’m counting down the days until it arrives. However, I am a fan of summer flavors and the best one in Texas is definitely PEACHES! During the summer months I don’t like to fuss too much over lunch and dinner. I want to make things that are easy and not too heavy but of course I want that great flavor payoff!

The other day I went to pick up some yellow peaches¬†with the intent of making a dessert. Once I got home after a day full of errands in the heat I just wasn’t in the mood to make dessert. I wasn’t in the mood to make a fussy dinner either. I looked over at the new peaches on the counter sitting pretty next to a loaf of whole grain bread and boom! I whipped up the most delicious, summery, brightly flavored toast for dinner. Clearly the peaches are the star here but there are two ingredients you just can’t skip or skimp on: red onion and toasted sliced almonds! With peaches and honey in this recipe the toast can get too sweet if you don’t counter the flavors and the red onion is crazy good here. This is so easy and quick. Once you’re done preparing the toast pour a glass of chilled white wine, sit and enjoy! It is summer after all.
